  • For the Streusel Topping:

  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Add pumpkin puree and eggs to the creamed mixture; mix until well combined.
  5. Gradually add the dry mixture into the wet ingredients until just combined.
  6. For the streusel topping, mix oats, nuts (if using), brown sugar, flour, and cinnamon until crumbly.
  7. Pour half of the batter into the prepared pan, sprinkle with half of the streusel topping. Pour in remaining batter and top with rest of the streusel.
