  • ½ cup whole milk
  • ½ cup unsalted butter, softened
  • 2 cups Granny Smith apples, peeled and chopped
  • 1 cup old-fashioned oats
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs and milk together. Add softened butter and mix until combined.
  4. Gradually fold wet ingredients into dry mixture until just combined. Gently fold in chopped apples.
  5. For the crumble topping, mix oats, brown sugar, cinnamon, and melted butter until crumbly.
  6. Fill each cupcake liner about two-thirds full with batter and sprinkle generously with crumble topping.
  7. Bake for 18–20 minutes or until a toothpick comes out clean. Allow to cool slightly before serving.
