  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup fresh apple cider (unfiltered)
  • 3 large eggs (room temperature)
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar and mix until creamy.
  4. Add sour cream, apple cider, eggs, cinnamon, and nutmeg; mix until well combined.
  5. Pour the filling over the crust and smooth out the top.
  6. Bake for 50-60 minutes until slightly jiggly in the center. Turn off the oven and let cool inside for an hour.
  7. Chill in the refrigerator for at least four hours or overnight before serving.
