- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons taco seasoning
- 1.5 cups shredded cheddar cheese
- 4 large flour tortillas
- 2 tablespoons olive oil
Instructions
- Prepare your ingredients by dicing the chicken and slicing the bell peppers and onion.
- In a large skillet over medium heat, heat olive oil. Add diced chicken and taco seasoning; cook until no longer pink (about 5-7 minutes).
- Add the sliced peppers and onion to the skillet; cook until veggies are tender (about another 5 minutes).
- Remove skillet from heat. On a clean surface, lay one tortilla flat; sprinkle half with cheese, add chicken-veggie mixture, top with more cheese, and fold.
- Wipe out the skillet and return to medium heat. Cook folded quesadilla until golden brown on both sides (3-4 minutes per side).
- Transfer to a cutting board, rest for a minute, slice into wedges, and serve warm with salsa or guacamole.
