Description

Delmonico Potatoes are the ultimate comfort food, combining tender layers of russet potatoes with a creamy, savory cheese sauce.   • 2 lbs russet potatoes, peeled and sliced into 1/4-inch rounds
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded (divided)
  • 4 tbsp unsalted butter
  • 1 small onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, melt 2 tablespoons of butter and sauté the chopped onion until translucent (about 5 minutes).
  3. In a large bowl, mix heavy cream, half of the cheddar cheese, sautéed onions, salt, and pepper until smooth.
  4. Layer half of the potato slices in the greased dish and pour half of the creamy mixture over them. Repeat with another layer of potatoes and finish with the remaining cream mixture on top.
  5. Cover with foil and bake for about 45 minutes. Remove foil, sprinkle with remaining cheddar cheese, and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
