  • 9 lasagna noodles (no-boil)
  • 4 cups fresh spinach
  • 2 cups cremini mushrooms, sliced
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil, sauté garlic until fragrant, then add mushrooms until golden brown. Stir in spinach until wilted.
  3. In a bowl, mix ricotta cheese, half the mozzarella, heavy cream, salt, pepper, and Italian seasoning until smooth.
  4. Layer the baking dish starting with the cheese mixture, followed by noodles and veggies. Repeat layers until all ingredients are used. Top with remaining mozzarella and Parmesan.
  5. Cover with foil and bake for 30 minutes. Remove foil for an additional 10 minutes until bubbly and golden.
  6. Let cool for 10 minutes before slicing and serving.
