Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  3. In the same skillet, add sliced mushrooms and minced garlic. Sauté until golden brown and tender (about 5 minutes).
  4. Pour in heavy cream, chicken broth, and Dijon mustard while stirring continuously. Simmer for about 5 minutes until slightly thickened.
  5. Return chicken to the skillet, spoon sauce over each piece, and cook together for an additional 3 minutes.
  6. Plate the chicken and spoon sauce on top; garnish with chopped parsley.
