  • 1 cup Andouille sausage (sliced)
  • 1 medium yellow onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 stalks celery (diced)
  • 3 cloves garlic (minced)
  • 2 bay leaves
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried thyme
  • 4 cups low-sodium chicken broth

Instructions

  1. Soak the dried red beans in water overnight. If using canned beans, rinse under cold water.
  2. In a large pot over medium heat, add oil and sauté chopped onion, bell pepper, celery, and minced garlic until tender (about 5 minutes).
  3. Add sliced sausage to the pot and cook until golden brown.
  4. Stir in cayenne pepper, thyme, bay leaves, and any additional seasonings.
  5. Add soaked or rinsed canned beans along with chicken broth until covered. Bring to a boil and then reduce to a simmer.
  6. Cover partially and simmer for about an hour if using dried beans or around 20 minutes for canned beans. Stir occasionally.
  7. Serve hot over fluffy white rice.
