- 2 ripe mangoes (about 300g)
- 1 cup full-fat coconut milk (240ml)
- 1 tbsp unflavored gelatin powder (9g)
- 1/4 cup granulated sugar (50g)
- 1/2 cup filtered water (120ml)
Instructions
- Peel and chop the mangoes. Set aside half for garnish and blend the rest into a smooth puree.
- In a small bowl, sprinkle gelatin over water and let it bloom for about 5 minutes.
- In a saucepan over low heat, combine mango puree, coconut milk, sugar, and bloomed gelatin. Stir until well mixed and heated through but not boiling.
- Pour the mixture into molds or serving cups and refrigerate for at least 2 hours until set.
- Once set, garnish with reserved mango pieces and serve chilled.
