- 4 medium sweet potatoes (about 2 lbs)
- 1 lb lean ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 cup shredded cheddar cheese
- ½ cup sour cream or Greek yogurt
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scrub the sweet potatoes and pierce each several times with a fork. Place on the baking sheet and bake for 45-60 minutes until tender.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Add black beans, diced tomatoes, chili powder, cumin, and salt; simmer for 10 minutes.
- Once the sweet potatoes are done, slice them open lengthwise and fluff the insides with a fork. Generously fill each potato with chili.
- Top with shredded cheese while hot, followed by sour cream or Greek yogurt.
