Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 3 tbsp soy sauce (low-sodium)
  • 8 oz soba noodles
  • 4 green onions, chopped (for garnish)
  • 4 soft-boiled eggs
  • 2 cups baby spinach or bok choy

Instructions

  1. Season chicken breasts with salt and pepper. Heat oil in a skillet over medium heat and sear the chicken for 5-7 minutes per side until golden brown. Let rest before slicing.
  2. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  3. Pour in chicken broth and soy sauce; bring to a simmer while scraping the pan’s bottom for flavor.
  4. Add soba noodles to the simmering broth and cook according to package instructions (4-6 minutes), stirring occasionally.
  5. Divide cooked noodles into bowls and ladle broth over them. Top with sliced chicken, soft-boiled eggs, spinach or bok choy, and green onions.
  6. Drizzle remaining broth over each bowl and serve immediately.
