Description

Cheesy Taco Rice Skillet is the ultimate comfort dish that combines spiced ground beef, colorful veggies, and gooey melted cheese in a one-pan wonder. Perfect for busy weeknights or Taco Tuesdays, this recipe is not only easy to prepare but also packed with flavor.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1 cup bell peppers (diced, any color)
  • 1 packet taco seasoning (about 1 oz)
  • 1 can black beans (15 oz, rinsed and drained)
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • ½ cup water (for cooking)

Instructions

  1. In a large skillet over medium heat, brown the ground beef for 5-7 minutes until fully cooked. Drain excess fat if needed.
  2. Add diced bell peppers and cook for another 3-4 minutes until softened.
  3. Sprinkle taco seasoning over the mixture and add water as per package instructions. Stir well to combine.
  4. Stir in rinsed black beans and uncooked rice; pour in enough water based on rice package directions.
  5. Bring to a boil, then cover and reduce heat to simmer for about 15-20 minutes or until rice is tender.
  6. Sprinkle shredded cheddar cheese on top, cover for one more minute to melt the cheese.
  7. Serve warm with sour cream on top if desired.
