Instructions
- Preheat oven to 400°F (200°C).
- Wash and scrub potatoes thoroughly. Bake directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until tender.
- Allow potatoes to cool slightly, then cut each in half lengthwise and scoop out most of the flesh, leaving about a quarter-inch border.
- Brush the insides with olive oil, season with salt and pepper, and place them back on the baking sheet.
- Fill each potato skin with shredded cheddar cheese and top with bacon bits.
- Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
