Instructions

- In another bowl, beat eggs and oil until smooth; stir in shredded carrots.

- Scoop dollops onto baking sheets about two inches apart and bake for 12-15 minutes.
- While cooling, beat cream cheese and butter together; gradually mix in powdered sugar and vanilla until smooth.
- Once cakes are cool, spread or pipe cream cheese filling on half of the cakes and sandwich with the other halves.
