  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup cocoa powder (unsweetened)

  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup smooth peanut butter
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs one at a time along with vanilla extract; mix until combined.
  4. In another bowl, whisk together cocoa powder, flour, baking powder, and salt. Gradually add to the wet ingredients until just blended.
  5. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges set.
  6. While cooling, prepare the frosting by mixing peanut butter and powdered sugar until smooth. Once cookies are cooled, frost each cookie with about a teaspoon of the mixture.
