  • 1/2 cup sliced almonds, lightly toasted (about 70g)
  • 1/2 cup dried cranberries (about 80g)
  • 1/4 cup finely chopped red onion (about 40g)
  • 1/2 cup mayonnaise (about 120g)
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey

Instructions

  1. Wash and cut the broccoli into bite-sized pieces.
  2. Cook bacon in a skillet over medium heat until crispy. Allow to cool and crumble.
  3. Toast sliced almonds in a separate pan over low heat for about five minutes.
  4. In a large bowl, whisk together mayonnaise, apple cider vinegar, and honey until smooth.
  5. In another bowl, combine broccoli florets, crumbled bacon, cranberries, red onion, and toasted almonds. Pour the dressing over and toss gently.
  6. Chill in the refrigerator for at least 30 minutes before serving.
