Instructions

  1. Preheat your oven to 400°F (200°C). Wash beets thoroughly, wrap in foil, and place on a baking sheet. Roast for 45-60 minutes until tender. Allow to cool before peeling.
  2. While the beets cool, wash and dry mixed greens, placing them in a large bowl.
  3. In a small bowl, whisk together balsamic vinaigrette ingredients: balsamic vinegar, olive oil, salt, and pepper.
