  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 3 large eggs (room temperature)
  • 4 medium Granny Smith apples, peeled and sliced
  • 2 tsp cinnamon
  • ½ cup brown sugar
  • 1 cup rolled oats

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. In another bowl, beat cream cheese and granulated sugar until smooth. Add sour cream; mix well. Incorporate eggs one at a time until blended.
  3. Pour filling over the crust and bake for about 50-60 minutes until set around edges but slightly jiggly in center.
  4. Toss sliced apples with brown sugar, cinnamon, and oats in a separate bowl.
  5. Layer apple mixture evenly on top of the cheesecake after it comes out of the oven. Bake for an additional 20–25 minutes until apples are tender.
  6. Cool completely at room temperature before refrigerating for at least four hours or overnight.
