Instructions

  2. Peel and cut the Yukon Gold potatoes into 2-inch thick slices.
  3. In a large ovenproof skillet, melt 2 tablespoons of butter over medium-high heat. Sear the potato slices for about 5 minutes on each side until golden brown.
  4. Add whole garlic cloves and thyme sprigs around the potatoes. Pour in chicken stock until it reaches halfway up the sides of the potatoes.
  5. Transfer the skillet to the preheated oven and roast for 25-30 minutes until fork-tender and golden brown.
