Instructions

- In a large ovenproof skillet, melt 2 tablespoons of butter over medium-high heat. Sear the potato slices for about 5 minutes on each side until golden brown.
- Add whole garlic cloves and thyme sprigs around the potatoes. Pour in chicken stock until it reaches halfway up the sides of the potatoes.
- Transfer the skillet to the preheated oven and roast for 25-30 minutes until fork-tender and golden brown.
