  • 1 cup sharp cheddar cheese (about 120g), shredded
  • 1 medium onion, chopped
  • 4 cups low-sodium vegetable broth (about 960ml)
  • 1 cup heavy cream (about 240ml)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by peeling and dicing the potatoes. Mince the garlic and chop the onion.
