- 4 cups low-sodium vegetable broth

Instructions
- Prepare your ingredients by peeling and cubing the butternut squash, removing corn kernels if using fresh corn, and dicing the onion.
- In a large pot over medium heat, add olive oil and sauté the diced onion until translucent (about 5 minutes).
- Add cubed butternut squash and corn; cook for an additional 5-7 minutes until they start to soften.
