Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, combine whole wheat flour, baking powder, and salt.
- In another bowl, whisk together Greek yogurt, honey (or maple syrup), melted coconut oil, and eggs until smooth.
- Gradually fold the wet ingredients into the dry mixture until just combined.
- Gently fold in the fresh blueberries.
- Spoon the batter into the muffin tin and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool slightly before transferring to a wire rack.
