  • 4 medium-sized potatoes
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Wash and cut potatoes into wedges. Toss with olive oil, salt, and pepper in the baking dish.
  3. Bake for 25-30 minutes until golden brown, flipping halfway through.
  4. While the potatoes bake, cook ground meat in a skillet until browned. Drain fat, then add taco seasoning per package instructions.
  5. Once potatoes are done, layer seasoned meat and cheese on top; return to the oven until cheese melts.
  6. Remove from oven and garnish with sour cream, lettuce, tomatoes, and green onions before serving.
