- 4 medium-sized potatoes
- 1 lb ground beef or turkey
- 2 tbsp taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 cup chopped lettuce
- 1 cup diced tomatoes
Instructions
- Preheat oven to 400°F (200°C) and spray a baking dish with nonstick spray.
- Wash and cut potatoes into wedges. Toss with olive oil, salt, and pepper in the baking dish.
- Bake for 25-30 minutes until golden brown, flipping halfway through.
- While the potatoes bake, cook ground meat in a skillet until browned. Drain fat, then add taco seasoning per package instructions.
