  • 4 large Portobello mushrooms
  • 1 cup Italian seasoned breadcrumbs
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • 2 tbsp olive oil (for sautéing)
  • 8 oz cream cheese, softened
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Clean the Portobello caps with a damp paper towel and remove stems and gills.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add chopped mushroom stems and sauté until soft.
  4. In a mixing bowl, combine sautéed garlic and mushroom stems with breadcrumbs, cream cheese, Parmesan cheese, basil, parsley, salt, and pepper. Mix well.
  5. Generously stuff each mushroom cap with the filling mixture.
  6. Place stuffed mushrooms on a parchment-lined baking sheet and bake for about 20 minutes until golden brown.
