  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves garlic, minced
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • 2 tbsp freshly squeezed lime juice
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper and place them in a slow cooker or Instant Pot.
  2. In a bowl, combine garlic, cumin, chili powder, and olive oil; pour over chicken.
  3. Add chicken broth and lime juice. Cook on low for 6 hours or high for 3 hours in the slow cooker; or seal and cook on high pressure for 15 minutes in an Instant Pot.
  4. Once cooked, shred the chicken with two forks while still warm.
