Description

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 4 oz crumbled feta cheese
  • 4 cups mixed greens (baby spinach or arugula)

Instructions

  1. Marinate chicken breasts in olive oil, lemon juice, garlic powder, salt, and pepper for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat; cook marinated chicken for about 6-7 minutes per side until fully cooked (165°F/75°C). Let rest before slicing.
  3. Chop cherry tomatoes and cucumber into bite-sized pieces.
