- 2 medium zucchinis
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1 cup enchilada sauce (store-bought or homemade)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Slice zucchinis lengthwise into thin strips.
- In a bowl, mix black beans, corn, half of the cheese, cumin, chili powder, salt, and pepper.
- Roll about two tablespoons of filling in each zucchini strip.
- Spread some enchilada sauce on the bottom of the baking dish; place rolled zucchini snugly in the dish and cover with the remaining sauce.
- Top with the rest of the cheese and bake for 25 minutes until golden brown.
