- 2 large sweet potatoes (about 1 lb), peeled and cubed
- 1 cup BBQ sauce (store-bought or homemade)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- Fresh cilantro, for garnish
- ½ cup sour cream or Greek yogurt, for serving
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika in a bowl. Spread on the baking sheet.
- Season chicken breasts with salt, pepper, and BBQ sauce until well-coated.
- Place both the chicken and sweet potatoes in the oven. Roast for 25-30 minutes until the chicken reaches an internal temperature of at least 165°F (74°C) and sweet potatoes are tender.
- Allow everything to rest for a few minutes before chopping fresh cilantro.
