Ingredients
- 3 lbs beef chuck roast, cut into 2-inch cubes
- 4 medium carrots, sliced into thick rounds
- 3 medium Yukon Gold potatoes, diced

- 4 cloves garlic, minced
- 6 cups low-sodium beef broth
- 1 cup dry red wine
- 1 handful fresh thyme sprigs (or 1 tsp dried thyme)
- 2 bay leaves
- Salt and pepper to taste

Instructions
- In a large pot or Dutch oven over medium-high heat, add olive oil and sear the beef cubes until browned on all sides; remove and set aside.
- In the same pot, sauté onions until translucent, then add minced garlic until fragrant.
- Deglaze the pot with red wine, scraping up browned bits; simmer for about 3 minutes.
- Return beef to the pot and add carrots, potatoes, thyme, bay leaves, salt, pepper, and beef broth; stir to combine.
- Bring to a boil; reduce heat to low and cover. Simmer for about 2 hours or until beef is fork-tender.
