Ingredients

Scale
  • 1 large head romaine lettuce (about 8 cups, chopped)
  • 1 cup homemade croutons (or store-bought)
  • ½ cup freshly grated Parmesan cheese
  • 2 tsp anchovy paste
  • 2 cloves garlic (minced)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp Dijon mustard
  • ⅓ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and dry the romaine lettuce thoroughly, then chop into bite-sized pieces and place in a large bowl.
  2. If making homemade croutons, preheat your oven to 375°F (190°C). Cut stale bread into cubes, drizzle with olive oil, season with garlic powder and Italian seasoning. Bake for about 10–15 minutes until golden brown.
  3. In a small bowl, whisk together minced garlic, anchovy paste, Dijon mustard, lemon juice, and olive oil until smooth. Season with salt and pepper.
  4. Pour the dressing over the lettuce, add croutons and Parmesan cheese. Toss gently until well combined.
  5. Serve immediately on plates or from the mixing bowl.
