- 3–4 boneless, skinless chicken breasts (about 1 pound), sliced thin
- 8 oz lo mein noodles
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 medium carrots, julienned
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- Slice the chicken and vegetables.
- Cook lo mein noodles according to package instructions; drain and toss with sesame oil.
- In a large skillet over medium-high heat, sauté the chicken until golden brown (about 5-7 minutes). Remove and set aside.
- Stir-fry bell peppers, carrots, and green onions in the same skillet until tender-crisp (about 3-4 minutes).
- Return chicken to the pan with cooked noodles and add soy sauce mixture; toss until well combined.
- Serve garnished with additional green onions if desired.
