  • 8 oz lo mein noodles
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium carrots, julienned
  • 4 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Slice the chicken and vegetables.
  2. Cook lo mein noodles according to package instructions; drain and toss with sesame oil.
  3. In a large skillet over medium-high heat, sauté the chicken until golden brown (about 5-7 minutes). Remove and set aside.
  4. Stir-fry bell peppers, carrots, and green onions in the same skillet until tender-crisp (about 3-4 minutes).
  5. Return chicken to the pan with cooked noodles and add soy sauce mixture; toss until well combined.
  6. Serve garnished with additional green onions if desired.
