  • 1 cup sushi rice
  • 2 tbsp rice vinegar
  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1 ripe avocado, sliced
  • 1 cup firm tofu, cubed
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions (about 20 minutes).
  2. Once cooked, transfer the rice to a bowl and mix in rice vinegar and a pinch of salt.
  3. While the rice cools, chop the cucumber and carrot into thin strips and slice the avocado.
  4. Marinate tofu in soy sauce for about 10 minutes. Pan-fry in oil over medium-high heat until golden brown.
  5. In serving bowls, layer the seasoned sushi rice with cucumber, carrot, avocado, and crispy tofu.
  6. Drizzle with soy sauce and sriracha to taste before serving.
