- 1 ripe avocado, sliced

- 1 tsp sriracha (optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions (about 20 minutes).
- Once cooked, transfer the rice to a bowl and mix in rice vinegar and a pinch of salt.
- While the rice cools, chop the cucumber and carrot into thin strips and slice the avocado.
- Marinate tofu in soy sauce for about 10 minutes. Pan-fry in oil over medium-high heat until golden brown.
- In serving bowls, layer the seasoned sushi rice with cucumber, carrot, avocado, and crispy tofu.
