  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice sourdough bread into thick pieces and place on a baking tray.
  3. On another tray, toss halved cherry tomatoes with olive oil, salt, and pepper; roast for 15 minutes until softened.
  4. Toast the bread in the oven for about 5 minutes until lightly crisp.
  5. Assemble by layering roasted tomatoes on the toast followed by crumbled feta and fresh basil.
  6. Drizzle with a bit more olive oil and return to the oven for another 5 minutes until warmed through.
