Ingredients
- 3 lbs chuck roast
- 2 medium onions, diced
- 3 medium carrots, sliced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 1 cup red wine
- 1 cup coarse-ground polenta
- 4 oz Gorgonzola cheese, crumbled
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 325°F (160°C). Season the chuck roast with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned (about 5 minutes per side). Remove and set aside.
- In the same pot, sauté onions, carrots, and garlic for about 5 minutes until softened.
- Deglaze the pot by adding red wine; scrape up any browned bits from the bottom. Let simmer for 3 minutes.
- Return the roast to the pot along with beef broth. Bring to a gentle simmer, cover tightly, and cook in the oven for about 3 hours or until fork-tender.
- Meanwhile, bring 4 cups of water or broth to a boil in another saucepan. Gradually whisk in polenta and cook according to package instructions (approximately 20 minutes). Stir in crumbled Gorgonzola cheese until melted.
- Once the roast is done, slice against the grain and serve over Gorgonzola polenta with vegetables spooned on top.
