Instructions
- Prepare your ingredients: wash and slice the zucchinis into ribbons, chop the tomatoes, and mince the garlic.
- Cook the pasta in salted boiling water according to package instructions until al dente (8-10 minutes). Reserve some pasta water before draining.
- In a large skillet over medium heat, heat olive oil and sauté minced garlic for about 1 minute until fragrant. Add chopped tomatoes and cook for 5 minutes until they start breaking down.
- Add zucchini ribbons to the skillet, cooking for another 3 minutes until slightly tender.
