- 1 small red onion, finely diced
- 4 whole-wheat or regular pita breads
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Sauté garlic and red onion until translucent (about 2 minutes).
- Add chopped spinach and cook until wilted (about 3 minutes).
- In a bowl, combine the spinach mixture with feta cheese and lemon juice. Season with salt and pepper.
- Open each pita pocket and generously fill it with the spinach-feta mixture.
- Optionally, toast stuffed pitas in an oven at 375°F (190°C) for about 5 minutes until golden.
- Serve warm or at room temperature.
