Ingredients

Scale
  • 1 lb fresh shrimp, peeled and deveined
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ small red onion, thinly sliced

  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard

  3. While shrimp cooks, dice cucumber, halve cherry tomatoes, and slice red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to create the dressing.
  5. In a large bowl, combine mixed greens with chopped veggies and add cooked shrimp on top.
  6. Drizzle dressing over the salad and toss gently to combine.
  7. Serve immediately or chill for 30 minutes before serving.
