  • 1 lb fresh skinless salmon fillets
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh parsley or dill (chopped)
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 ripe avocado (sliced)
  • 1/2 cup Greek yogurt
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Chop the salmon fillets into small pieces (about half an inch).
  2. In a large bowl, combine chopped salmon, breadcrumbs, herbs, lemon juice, salt, and pepper. Mix gently until just combined.
  3. Shape the mixture into patties about three-quarters of an inch thick.
  4. Heat olive oil in a skillet over medium heat and cook patties for about 4 minutes on each side until golden brown.
  5. For the sauce, mix Greek yogurt with lime juice in a small bowl and season with salt and pepper to taste.
  6. Assemble burgers on toasted buns topped with avocado slices and sauce.
