Description

Grilled Veggie Skewers are a colorful and delicious addition to any summer gathering. Bursting with fresh bell peppers, juicy cherry tomatoes, tender zucchini, and earthy mushrooms, these skewers offer a delightful combination of smoky and sweet flavors. Ideal for picnics, barbecues, or as a vibrant side dish, they are easy to prepare and can be customized with your favorite vegetables. Serve them with your choice of dipping sauces for an extra burst of flavor!

Ingredients

Scale
  • 1 bell pepper (any color), cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 1 cup cherry tomatoes
  • 1 cup button or cremini mushrooms
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (around 400°F or 200°C).
  2. Wash all vegetables thoroughly. Cut the bell pepper into chunks, slice the zucchini into thick rounds, halve the cherry tomatoes (optional), and cut the red onion into wedges.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Assemble the skewers by alternating vegetables: bell pepper, zucchini, mushroom, onion—repeat until filled.
  4. Drizzle olive oil over assembled skewers and season with salt and pepper. Massage the seasonings into the veggies.
  5. Grill skewers for about 10-15 minutes, turning occasionally until charred and tender but still crisp.
  6. Serve immediately; drizzle with balsamic glaze or your favorite dipping sauce.
