  • 4 ears fresh corn (or 2 cups frozen corn)
  • 1/4 cup mayonnaise (or Greek yogurt)
  • 1/2 cup crumbled cotija cheese (or feta)
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Shuck the fresh corn and remove all husks. If using frozen corn, allow it to thaw.
  2. Grill the corn on medium-high heat for about 10 minutes until charred, or boil in salted water for 5-7 minutes until tender.
  3. Once cooled, cut off the kernels into a mixing bowl.
  4. Combine the corn with mayonnaise, lime juice, chili powder, half of the cotija cheese, and cilantro. Mix well.
  5. Taste and adjust seasoning if needed.
  6. Serve in cups topped with remaining cotija cheese and an extra sprinkle of chili powder.
