Description

Ingredients

  • 2 medium sweet potatoes (about 400g)
  • 1 cup red lentils (200g)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup chopped cilantro or parsley (15g)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs (30g)
  • 2 tbsp olive oil for frying

Instructions

  1. Rinse the red lentils under cold water until clear. Combine with 3 cups water in a saucepan, bring to a boil, then simmer for 15-20 minutes until tender. Drain excess water.
  2. Preheat the oven to 400°F (200°C). Prick sweet potatoes with a fork and bake for about 45 minutes until fork-tender. Let cool slightly, then scoop out flesh into a bowl.
  3. In the bowl, combine sweet potato flesh, cooked lentils, chopped onion, minced garlic, cilantro or parsley, cumin, paprika, salt, and pepper. Mix until well combined.
  4. Add panko breadcrumbs and form small patties (about 2 inches wide). Place on parchment-lined plate.
  5. Heat olive oil in a skillet over medium heat. Fry each patty for about 4 minutes per side until golden brown.
  6. Transfer to paper towels to absorb excess oil before serving.
