Ingredients
- 2 medium russet potatoes
- 2 tbsp olive oil
- 1 cup shredded sharp cheddar cheese
- 1/2 cup bacon bits
- 1/2 cup sour cream

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and bake the russet potatoes directly on the oven rack for about 45 minutes or until tender.
- Allow to cool, then cut in half lengthwise and scoop out most of the insides, leaving about a quarter-inch of potato.
- Brush both sides of the skins with olive oil, sprinkle with salt, and bake upside down on a baking sheet for an additional 10-15 minutes until crispy.
- Remove from the oven and fill each skin with cheddar cheese and bacon bits. Return to the oven for 5 minutes until melty.
- Top with sour cream and chives before serving warm.
