  • 1 lb fresh salmon fillets, cut into 1-inch pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 3 tbsp Sriracha sauce (adjust to taste)
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the salmon into bite-sized pieces.
  3. Set up a breading station: in one bowl, mix flour with salt and pepper; in another bowl, place beaten eggs; and in a third bowl, add panko breadcrumbs.
  4. Dip each salmon piece into the flour mixture, then into the egg wash, and coat with panko breadcrumbs.
  5. Place the breaded salmon on a parchment-lined baking sheet and lightly spray with cooking oil.
  6. Bake for 12–15 minutes or until golden brown.
  7. While baking, mix mayonnaise, Sriracha, and honey in a bowl for the sauce.
  8. Drizzle the Bang Bang sauce over the baked salmon bites before serving.
