Ingredients
- 1 lb fresh salmon fillets, cut into 1-inch pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 cup mayonnaise
- 3 tbsp Sriracha sauce (adjust to taste)
- 2 tbsp honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Cut the salmon into bite-sized pieces.
- Set up a breading station: in one bowl, mix flour with salt and pepper; in another bowl, place beaten eggs; and in a third bowl, add panko breadcrumbs.
- Dip each salmon piece into the flour mixture, then into the egg wash, and coat with panko breadcrumbs.

- Bake for 12–15 minutes or until golden brown.
- While baking, mix mayonnaise, Sriracha, and honey in a bowl for the sauce.
