  • 4 fresh fish fillets (cod or tilapia)
  • 1 cup panko breadcrumbs
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 3 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Rinse the fish fillets under cold water and pat dry with paper towels.
  3. In a bowl, mix salt, pepper, and half of the panko breadcrumbs. Sprinkle over both sides of the fish.
  4. Dip each fillet in olive oil then coat with the remaining panko breadcrumbs, placing them in the baking dish.
  5. Bake for 15-20 minutes until golden brown and flaky.
  6. Combine garlic, lemon juice, herbs, salt, pepper, and olive oil in a bowl for the sauce.
  7. Drizzle sauce over baked fish before serving.
