- 4 fresh fish fillets (cod or tilapia)
- 1 cup panko breadcrumbs
- 3 tbsp freshly squeezed lemon juice
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped

- 2 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Rinse the fish fillets under cold water and pat dry with paper towels.
- In a bowl, mix salt, pepper, and half of the panko breadcrumbs. Sprinkle over both sides of the fish.
- Dip each fillet in olive oil then coat with the remaining panko breadcrumbs, placing them in the baking dish.
