- 1–2 cloves garlic (10g)
- Juice of 1 medium lemon (about 30ml)
- 2 tbsp olive oil (30ml)

Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes, then chop them into small cubes.
- Spread the sweet potato cubes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Toss to coat.
- Roast in the oven for 25-30 minutes until tender and slightly caramelized. Allow them to cool slightly.
- In a food processor, combine roasted sweet potatoes, tahini, garlic, lemon juice, and olive oil. Blend until smooth; add water or more olive oil if needed for creaminess.
- Taste and adjust seasoning as necessary. Serve in a bowl drizzled with olive oil and garnished with paprika or fresh herbs.
