Instructions
- Preheat your oven to 400°F (200°C). Drizzle olive oil in a baking dish.
- Combine cherry tomatoes, feta cheese, minced garlic, salt, and pepper in the baking dish. Drizzle with additional olive oil.
- Roast in the oven for 25-30 minutes until tomatoes burst and feta is golden brown.
- While roasting, boil water in a large pot and cook penne according to package instructions until al dente. Drain, reserving some pasta water.
- Mix the roasted mixture until creamy; add cooked pasta and mix well. If needed, use reserved pasta water to adjust consistency.
- Serve topped with fresh basil and an extra drizzle of olive oil.
