  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 3 medium carrots (about 300g), peeled and diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth (960ml)
  • 1 cup full-fat coconut milk (240ml)
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Peel and dice the sweet potatoes and carrots into bite-sized pieces.
  2. In a large pot over medium heat, sauté the diced onion and minced garlic in a little oil until fragrant and translucent (about 5 minutes).
  3. Add the diced sweet potatoes and carrots; stir to combine with the onions and garlic for about 2 minutes.
  4. Pour in the vegetable broth to cover the veggies completely. Bring to a simmer and cook until tender (around 20 minutes).
  5. Use an immersion blender or a countertop blender to puree the soup until smooth.
  6. Return the soup to low heat, stir in coconut milk, cumin, cinnamon, salt, and pepper; warm through for another 5 minutes.
