Ingredients

Scale
  • 2 medium fresh beets (about 1 cup when roasted)
  • 2 ripe avocados, diced
  • 1 large orange, segmented
  • 1 large grapefruit, segmented
  • 4 cups mixed greens (baby spinach and arugula)
  • ½ cup crumbled feta cheese
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil

Instructions

  2. While the beets roast, peel and segment the orange and grapefruit, collecting juices in a bowl.
  3. Once cool, peel the roasted beets and slice into wedges. In a large bowl, toss mixed greens with olive oil and salt.
  4. Add diced avocado and crumbled feta to the greens.
  5. Incorporate roasted beet wedges and citrus segments into the salad mix.
  6. Drizzle balsamic glaze over the salad before serving.

Keywords: For added crunch, consider tossing in some toasted nuts like walnuts or pistachios. You can swap out oranges for additional grapefruits or use goat cheese instead of feta for a different flavor profile. Always use gloves when handling beets to avoid staining your hands!
