  • 2 pounds beef chuck roast
  • 1 medium onion, finely chopped
  • 45 cloves garlic, minced
  • 2 tablespoons tomato paste
  • ½ cup short grain rice
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 cup fresh cilantro, chopped
  • Juice of 1 lemon

Instructions

  1. Cut the beef into bite-sized pieces and season with salt and pepper.
  2. In a large pot over medium heat, sauté the onion in oil until translucent. Add garlic and stir for another minute.
  3. Add the seasoned beef chunks to the pot; cook until browned on all sides (about 10 minutes).
  4. Stir in tomato paste and spices; cook for another 2 minutes.
  5. Pour in enough water to cover the meat by an inch. Bring to a boil, then reduce heat to low and simmer for about an hour until tender.
  6. In the last ten minutes of cooking, add rice, cilantro, and lemon juice. Adjust seasoning as needed.
