- 2 lbs pork shoulder, cut into 1-inch pieces
- 4–6 fresh green chilies (or 1 can diced green chilies)
- 1 large sweet onion, finely chopped
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions
- Gather and prep all ingredients. If using fresh green chilies, roast until charred.
- In a large pot over medium-high heat, add oil and brown the pork shoulder on all sides.
- Remove pork from the pot; sauté onions until translucent, then add garlic and sauté for an additional minute.
- Return the pork to the pot along with green chilies, chicken broth, and lime juice; mix well.
- Bring to a simmer, cover partially, and cook for about two hours until the pork is tender.
- Shred the pork and return it to the sauce; serve hot topped with fresh cilantro.
